Mango Chutney

Ingredients

  • 12 cups green mango slices
  • 2 Tbsp. Hawaiian salt
  • 2 cups vinegar
  • 1/2 cup water
  • 4 cups sugar
  • 2 cups brown sugar
  • 1 cup raisins
  • 1/4 cup chopped ginger
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 1/2 Tbsp. chili peppers (optional)
  • 1/2 tsp cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. nutmeg (optional)
  • 1/4 tsp. allspice (optional)

Directions:

  1. Sprinkle salt over peeled and sliced mango. Let sit overnight.
  2. Rinse and drain the mango.
  3. Add remaining ingredients except mango, cook for 15 minutes, add mangoes and simmer for 45 minutes to 1 hour.
  4. Pout into hot sterilized jars and seal. Makes 6-8 cups.
